By October, I am no longer precious about preservation. By that time of year I am just throwing shit in jars. End-of-season harvesting is exhausting, and I am ready to settle into the fall and winter, where I get to enjoy the literal fruits of my labor and have friends ooh and ahh over my wall of colorful jarred goods.
